Brussels Sprouts with Maple Syrup

Who said that Brussels Sprouts weren't good? Obviously it was someone who had never tasted these Brussels Sprouts with maple syrup, butter and lemon juice! Serve them anytime, but they are great for a special dinner during the holidays.

Ingredients

2 lb. Brussels sprouts, cleaned and trimmed
2 t. extra-virgin olive oil
2 T. unsalted butter
1/4 c. pure maple syrup
1/2 c. freshly squeezed lemon juice

Fill a large bowl with half ice and half cold water.

Bring a large pot of at least 6 cups heavily salted water to boil over high heat; add the Brussels sprouts. Boil sprouts for 3 minutes; drain; transfer to an ice water bath. Drain. When cool, cut Brussels sprouts in half lengthwise.

In a large skillet over medium-high heat, heat oil. Add Brussels sprouts and sear, cut-side down, for 3-5 minutes, until they just begin to char, but aren't burned; watch them carefully. (Depending on the size of the skillet, you may need to work in batches.)

Transfer Brussels sprouts to a clean bowl; add the butter and maple syrup to the pan; stir while the butter melts. As soon as the butter has melted, return the Brussels sprouts to the pan; toss to coat.

Transfer Brussels sprouts to a serving dish/platter and drizzle any syrup left in the pan over them. Squeeze the lemon over the top.

Serve warm.
