Garlic Parmesan Broccoli and Potatoes in Foil

Description

Wow, this side dish of potatoes and broccoli is so easy and scrumptious. Each of 4 people will get their own packet to enjoy. These foil packets make clean up much faster and easier, as well.

Ingredients

3 T. olive oil
4 cloves garlic, minced
1 T. Italian seasoning
1/4 t. onion powder
kosher salt, to taste
freshly ground black pepper, to taste
24 oz. broccoli florets (5 cups)
16 oz. tiny baby red potatoes, washed and halved
1/4 c. freshly grated Parmesan cheese
2 T. chopped fresh parsley leaves

Preheat oven to 400 degrees.

In a small bowl, whisk together olive oil, garlic, Italian seasoning and onion powder; season with salt and pepper, to taste.

Cut 4 sheets of foil, each about 12 inches long. Divide broccoli and potatoes into 4 equal portions; add to the center of each foil sheet in a single layer.

Fold up all 4 sides of each foil packet. Spoon garlic mixture evenly over the broccoli and potatoes. Fold the sides of the foil over the vegetables, covering completely and sealing the packets closed.

Place foil packets in a single layer on a baking sheet. Place into the oven; bake until tender, about 12-14 minutes. Check for doneness of potatoes.

Serve while hot, sprinkled with Parmesan and parsley, if desired.

Serves 4.
