Slow Cooker Herbed Stuffing/Dressing

Description

Are you concerned about having enough space in your oven to make the dressing? Worry no more with this slow cooker stuffing. Make it it the slow cooker and then go about making the rest of the dinner. It is delicious and so easy.

Ingredients

1 stick unsalted butter
4 celery stalks, finely chopped
2 medium onions, finely chopped
1 T. chopped fresh flat-leaf parsley, plus extra for garnish
1 T. chopped fresh sage
1 T. chopped fresh thyme
1 t. kosher salt
1 t. freshly ground black pepper
2 c. low-sodium chicken or vegetable broth/stock
12 oz.bag cubed country-style stuffing
4 large eggs, beaten

Line a slow cooker with a slow cooker liner for easy clean up. Spray liner with non-stick cooking spray.

In a large skillet over medium-high heat, melt butter. Add celery and onions, and cook, stirring, until fragrant and softened, about 5 minutes. Stir in parsley, sage, thyme, salt and pepper; cook for 1 more minute. Add chicken broth/stock; scrape up brown bits on the bottom of the skillet, cooking for an another minute. Remove from the heat; cool slightly.

In a large bowl, combine cooled mixture with stuffing cubes and beaten eggs; mix well.

Transfer mixture to slow cooker; cover. Cook on Low 3-4 hours or until stuffing is set.

Garnish with fresh parsley. Serve.
