Make your gravy drippings go further with this great recipe. It practically doubles your gravy, and the Worcestershire sauce gives it a great color and flavor.
5 T. butter
freshly ground black pepper, to taste
salt, to taste
4 T. flour
1 qt. stock-in-a-box, turkey or chicken
2 T. Worcestershire sauce
1 - 2 c. pan drippings, fat skimmed off or separated
Melt butter in a pan over medium heat. Whisk in freshly ground pepper, then add flour; cook 2 minutes; whisk in stock and Worcestershire. Raise heat a little to thicken gravy till it lightly coats a spoon. Cover; turn off heat.
To serve, bring the gravy to a low bubble; whisk in pan drippings from your turkey or meat. Salt, to taste.
Makes 4 cups.
