Short on stovetop or oven space during the holidays, but still want a scrumptious side dish? Your problem is fixed with these brown sugar glazed carrots with cinnamon and ginger in the slow cooker.
2 lb. baby carrots
2 T. butter, melted
1/2 c. firmly packed brown sugar
1 1/2 t. ground cinnamon
1/2 t. ground ginger
1/2 t. salt
Wash carrots, drain and pat dry.
Place a slow cooker liner inside the crock of a 4 quart slow cooker for easy clean up. Spray the inside of the liner with non-stick cooking spray.
To the slow cooker, add the carrots and melted butter; toss to coat. Cover.
Cook on HIGH 3 - 4 hours, or until tender.
Just before ready to serve, mix the brown sugar, cinnamon, ginger and salt in small bowl until well blended. Toss this mixture in with the cooked carrots in the slow cooker. Stir well.
8-10 servings.
