The most difficult part of this delicious dessert is waiting for it to cool and set up in the refrigerator. It has a wonderful salty pretzel crust and a strawberry jello with crushed strawberries and whipping cream on top.
Ingredients
- Pretzel Crust:
- 1 1/4 c. crushed pretzels
- 1/4 c. granulated sugar
- 1/2 c. butter, melted
- Pie:
- 3/4 c. boiling water
- 1- 4 serving size package strawberry-flavored gelatin
- 1 t. grated lime peel
- 1/4 c. lime juice
- 1 1/2 c. whipping (heavy) cream
- 3/4 c. powdered sugar
- 2 c. strawberries, slightly crushed
- chocolate-covered strawberries, if desired
Steps
- In a medium bowl, mix all crust ingredients. Press mixture firmly against bottom and sides of 9 inch glass pie plate.
- In a large bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Stir in lime peel and lime juice. Refrigerate about 1 hour or until very thick, but not set.
- Beat gelatin mixture with an electric mixer on high speed, about 4 minutes or until thick and fluffy; set aside.
