butter, at room temperature butter
cream or cream cheese, at room temperature (cream cheese is best)
Use Yukon gold potatoes. They have a buttery flavor and creamy consistency.
Boil potatoes in potatoes in salted water until they're soft, but not dissolving and falling apart.
Always mash potatoes when they are hot.
Add room temperature butter and cream or cream cheese to help potatoes absorb the dairy much more easily.
Don't use a food processor or blender or they will become gluey and gummy.
Mash them by hand or use a hand mixer.
