Want your vegetables to be more than just healthy? These carrots are so good, you won't have any leftovers and no fights about eating their veggies.
1 lb. small, firm carrots, fresh in bunches (not baby carrots in the bag)
2 T. honey
2 T. olive oil
½ t. kosher salt
¼ t. freshly ground black pepper
Preheat oven to 400 degrees. Line a large baking sheet with foil.
Wash the carrots and pat dry with paper towels. Halve the carrots lengthwise.
In a large bowl, toss the carrots with the olive oil, honey, salt and pepper.
Spread the carrots on the baking sheet, in a single layer. Roast 30 minutes, stirring once, until carrots are tender, very browned, even scorched in parts.
Remove from oven and serve while hot.
