Use leftover meatloaf, mashed potatoes and/or veggies to make a great panini sandwiches. Make them and serve them immediately, or take them to work and reheat them in the microwave or toaster oven.
4 slices of bread of choice, sourdough is great
2 slices leftover meatloaf
leftover veggie sides and/or mashed potatoes
2 slices Provolone cheese
butter
Butter one side of each slice of bread. Place meatloaf, cheese and any other desired leftovers between the unbuttered sides.
Warm up a large skillet over medium heat. (You can also use a panini maker.) Carefully place both sandwiches in the skillet; cook a few minutes, lifting up with a spatula to check the progress. When the bottoms are golden brown, flip them. Press down firmly with spatula on the top of the bread to compress sandwiches (you can also do this by using a lightly sprayed lid from a pot).
Remove, and either serve immediately or reheat later in the microwave, oven or toaster oven.
Makes 2 sandwiches.
