If you make these cookies once, they will then become one of your family's favorites. Make them a tradition that they will carry with them forever.
cookies:
2 sticks unsalted butter, at room temperature
1/3 c. powdered sugar
3/4 c. cornstarch
1 c. all-purpose flour
frosting:
2 T. unsalted butter, at room temperature
1 c. powdered sugar
1 t. vanilla extract
cream or milk, to thin
grated chocolate, for garnish
Preheat oven to 350.
Blend together the soft butter, sugar, cornstarch and flour until well incorporated. Cover with plastic wrap; chill for at least 1 hour.
Using a small spoon or a scoop, form small heaps or balls of dough; place on an ungreased, cookie sheet. Use parchment paper if desired.
Bake 15 minutes until the bottoms are just starting to turn a light brown and the tops will be white.
Let cookies cool on the baking sheet; transfer carefully to a cooling rack. The cookies are very delicate, so use a very thin spatula to move them.
Let them cool completely before frosting.
frosting:
Mix the butter, sugar, vanilla, and enough milk or cream to make a spreadable consistency, but should be quite thick.
Dab it on top of the cooled cookies; garnish with some grated chocolate.
Makes about 18.
