Broccoli lovers will love this yummy side dish. It's made with broccoli, Asiago cheese and garnished with toasted almonds, then seasoned with salt, pepper, lemon zest and lemon juice.
I head of broccoli, cut into 1 1/2 inch florets with stems peeled and sliced
1/4 c. olive oil
1/2 c. shredded Asiago cheese
1/2 t. sugar
salt, to taste
pepper, to taste
zest and juice from 1 lemon
1/4 c. toasted pine nuts
Preheat oven to 400 degrees.
In a large bowl, toss broccoli, olive oil, Asiago cheese, sugar, salt and pepper.
Place on a baking sheet pan in an even layer. Roast 20-30 minutes, tossing halfway.
Just before serving, squeeze some freshly squeezed lemon juice and top with fresh lemon zest. Sprinkle toasted pine nuts on top.
