These blondies make a gorgeous dessert for holidays or special occasions. They are so rich, you may want to cut them a little smaller.
3/4 c. butter, cubed
1-1/2 c. packed light brown sugar
2 eggs
3/4 t. vanilla extract
2-1/4 c. all-purpose flour
1-1/2 t. baking powder
1/4 t. salt
1/8 t. ground cinnamon
1/2 c. dried cranberries
6 oz. white baking chocolate, coarsely chopped
frosting:
8 oz. cream cheese, softened
1 c. powdered sugar
1 T. grated orange peel, if desired
6 oz. white baking chocolate, melted
1/2 c. dried cranberries, chopped
In a microwave, melt butter; stir in brown sugar. Transfer to a large bowl; cool to room temperature. Beat in eggs and vanilla. Combine the flour, baking powder, salt and cinnamon; gradually add to butter mixture. Stir in cranberries and chopped chocolate (batter will be thick).
Preheat oven to 350 degrees. Grease a 13 x 9 inch baking dish.
Spread into the prepared baking dish. Bake 18-21 minutes or until a toothpick inserted near the center comes out clean. Be careful to not overbake. Cool on a wire rack.
frosting:
In a large bowl, beat cream cheese, powdered sugar and orange peel until blended. Gradually add half of the melted white chocolate; beat until blended.
Frost brownies; sprinkle with cranberries; drizzle with remaining melted white chocolate.
Cut into bars. Serve.
Store in the refrigerator.
Makes about 30 bars.
**To make them even more special, cut the bars into triangle shapes and drizzle white chocolate over each one individually.
