Cheeseburger Jalapeno Poppers

Description

These poppers are a great appetizer to serve at parties. They are filled with ground beef, seasonings, and topped with your favorite cheese. Make them as spicy or hot as you desire.

Ingredients

8 medium jalapeno peppers
1 T. butter
1/2 l.b lean ground beef, (80/20)
4 T. ketchup
1 T. Worcestershire sauce
1/2 t. onion salt
freshly ground black pepper, to taste
6 oz. cheese slices, your favorite (Monterrey Jack is a good choice)

several small scallions, very thinly sliced, for garnish
chives, snipped into very small pieces, for garnish

Preheat oven to 375 degrees.

Rinse the jalapenos; slice them in half, lengthwise; carefully scoop out the inner ribs and seeds. Set some of the seeds aside, if desired for added heat.

Melt butter in a skillet and brown the ground beef, breaking it up while cooking it. Meat should be finely crumbled.

Drain off excess fat; add ketchup, Worcestershire sauce, onion salt and pepper. Add some of the reserved jalapeno seeds into the pan, if you like the heat. Adjust the flavor and heat to taste.

Give each pepper half a quick roasting on a hot griddle, if desired, for added flavor. Get the pan really hot; set the peppers on the pan for several minutes until charred at little.

Place peppers on a baking sheet; fill each with the meat that is packed down and mounded a little more on top. Place a slice of cheese on top of each pepper. Bake about 5 minutes until the cheese is melted and they are hot through.

Garnish with the scallions and chives. Serve hot.
