Description
These poppers are a great appetizer to serve at parties. They are filled with ground beef, seasonings, and topped with your favorite cheese. Make them as spicy or hot as you desire.
Ingredients
- 8 medium jalapeno peppers
- 1 T. butter
- 1/2 l.b lean ground beef, (80/20)
- 4 T. ketchup
- 1 T. Worcestershire sauce
- 1/2 t. onion salt
- freshly ground black pepper, to taste
- 6 oz. cheese slices, your favorite (Monterrey Jack is a good choice)
- several small scallions, very thinly sliced, for garnish
- chives, snipped into very small pieces, for garnish
Steps
- Preheat oven to 375 degrees.
- Rinse the jalapenos; slice them in half, lengthwise; carefully scoop out the inner ribs and seeds. Set some of the seeds aside, if desired for added heat.
- Melt butter in a skillet and brown the ground beef, breaking it up while cooking it. Meat should be finely crumbled.
