Ham and Cheese Biscuits

Description

Why would you make plain biscuits when you could enjoy fluffy biscuits with cheddar cheese and salty ham? Serve with lunch or dinner, or even with breakfast!

Ingredients

1 3/4 c. all-purpose flour
1 T. plus 1/2 t. baking powder
1 1/2 t. granulated sugar
1/2 t. salt
10 T. cold unsalted butter, cut into 1 inch pieces
1/3 c. buttermilk
4 oz. ham, diced
2 oz. sharp Cheddar cheese, shredded
1/4 c. very thinly sliced green onions, optional

Stir flour, baking powder, sugar, and salt in large bowl to combine. Add very cold butter cubes; use fingers to press butter into the flour until the butter pieces are the size of large peas.

Stir in buttermilk, ham, green onions, if using and Cheddar cheese until just combined, using hands to press dough together, if necessary. Stir in a small amount of extra buttermilk if mixture is too dry.

Turn dough out onto a floured work surface; roll into a rectangle 1/2 inch thick. Fold 1/3 of the dough towards the middle. Fold the other 1/3 piece towards the middle. You should have 3 layers of dough.

Roll out to about 1 inch thick. Cut out biscuits with 2 1/4 inch biscuit cutter. You should get about 9 biscuits. Chill biscuits while you preheat the oven.

Preheat oven to 375 degrees. Adjust oven rack to middle position.

Arrange biscuits on parchment lined baking sheet. Bake until golden and set, 20 - 25 minutes. Transfer to wire rack to cool.
