Two different smoked cheeses, a sweet onion, Greek yogurt, sour cream, and a little hot sauce make this one fantastic appetizer. Put it over the top and make it on a grilled baguette to add even more flavor and some crunch!
1 large sweet onion
1/2 lb. smoked Gouda cheese, grated
1/2 lb. smoked Gruyere cheese, grated
1/2 c. sour cream
1/2 c. Greek yogurt
1/2 c. mayonnaise
1/2 t. salt
freshly ground black pepper, to taste
hot sauce, to taste
1 baguette, thinly sliced
Preheat oven to 375 degrees.
Peel onion; slice it 1/8 inch thick; chop the thin slices into a small dice; place in a large mixing bowl.
Add remaining ingredients to the bowl; mix well until thoroughly combined.
Evenly spread the dip in a shallow baking dish.
Bake 30-40 minutes until bubbling and hot throughout. If you wish, put it under the broiler briefly for more browning.
While the dip is baking, heat a grill pan on high until very hot; grill the slices of bread until lightly charred on both sides.
Serve dip hot with the bread.
