Rosemary Balsamic Baby Potatoes and Brussels Sprouts

Description

Many people say that they don't like Brussels sprouts. Those people need to try this side dish. Make it truly your own by adding your favorite veggies, bacon or cheese!

Ingredients

7 oz. Brussels sprouts
16 oz. baby potatoes (any variety)**
2 T. balsamic vinegar
1 T. olive oil
1 t. dried rosemary
salt, to taste
freshly ground black pepper, to taste

Preheat oven to 450 degrees.

Wash Brussels sprouts and potatoes; drain.

Cut off ends of the Brussels sprouts and discard; slice each sprout in half. Cut baby potatoes in half. Place all in a big bowl.

Drizzle olive oil and balsamic vinegar on the potatoes and sprouts. Season with salt and pepper; add rosemary. Toss well.

Place potatoes and sprouts on a baking sheet; bake 30 - 40 minutes or until potatoes are done and golden.

**Look for a bag of potatoes that offers 3 varieties.
