Is it breakfast or dessert? Is it bread or cake? It doesn't matter which it is because you can eat it anytime you wish. It is especially good with the Cinnamon Sugar Topping, but it is totally up to you.
2 eggs
1/3 c. sugar
1/4 c. water
1 t. vanilla
3/4 c. mashed bananas, from about 2 large bananas
1/2 c. vegetable oil
2 c. blueberry pancake mix
1 t. cinnamon
Cinnamon Sugar Topping:
1/4 c. sugar
1 t. cinnamon
Preheat oven to 350 degrees. Grease a loaf pan or a muffin tins.
In a medium bowl, whisk together eggs, sugar and water. Add vanilla, mashed bananas and vegetable oil; whisk until well combined. Add pancake mix and cinnamon; mix together until just combined.
Mix together the 1/4 c. sugar with the 1 t. cinnamon for the topping; set aside.
Divide batter between a regular muffin tin (or extra-mini loaf pan) or mini muffin tin; sprinkle tops with cinnamon and sugar mixture.
Bake regular muffins for 16 minutes or mini muffins for 10 minutes.
