Creamy Cauliflower Soup

Description

It's getting colder outside and what better way to warm up than a nice bowl of warm, creamy soup! Enjoy it as a main dish or on with your favorite sandwich or salad.

Ingredients

  • 1 T. extra virgin olive oil
  • 1 small onion, thinly sliced
  • 3 cloves garlic, finely chopped
  • 1 head cauliflower, about 2 lb., stalk trimmed and cut into small florets
  • 4 sprigs fresh thyme, finely chopped
  • 4½ c. vegetable stock
  • salt, to taste
  • freshly ground black pepper, to taste
  • Garnish:
  • roasted chickpeas
  • fresh thyme, finely chopped
  • extra virgin olive oil

Steps

  1. Heat olive oil in a large pot over medium heat. Saute the onion and garlic until softened, about 5 minutes.
  2. Add cauliflower and thyme; cook about 3 minutes, stirring often.
  3. Add vegetable stock; simmer on medium heat about 15 minutes, until the cauliflower is very soft.
