Add this yummy, crunchy side dish to your recipes. It's a great one to make for everyday meals or even at holiday time.
1 small onion, finely chopped
1 T. butter
4 c. fresh or frozen corn, thawed
1 c. heavy whipping cream
1/4 c. chicken broth/stock
4-6 bacon strips, cooked and crumbled
1/4 t. pepper
1/4 c. grated Parmesan cheese
2 T. minced fresh parsley
Kosher salt, to taste
In a large skillet, saute onion in butter for 3 minutes. Add corn; saute 1-2 minutes longer or until onion and corn are tender.
Stir in the cream, broth/stock, crumbled bacon and pepper. Cook and stir for 5-7 minutes or until slightly thickened. Stir in cheese and parsley. Taste and add salt, if desired.
6 servings.
**Add a little cornstarch if you would like it a little thicker.
