Description
Make cauliflower salad instead of potato salad and save yourself almost 35 carbs per cup. It tastes great and satisfies that potato salad craving.
Ingredients
- 1 head cauliflower
- 6 hard boiled eggs plus extra egg slices for garnish, if desired
- 1/3 c. mayonnaise or Miracle Whip (DON'T use light, since it has more carbs)
- 3 T. mustard
- 3 T. pickle relish, or chopped celery
- 1/8 c. chopped onion, or to taste
- salt and pepper, to taste
- chopped fresh parsley for garnish, if desired
- celery salt to taste, if desired
Steps
- Steam or boil cauliflower until tender; cut into bite sized pieces.
- Cook eggs until hard boiled; peel eggs, rinse and separate yokes into a bowl; mash the yolks; cut the whites into small bite sized pieces; blend together.
- Mix all together. Garnish with egg slices and parsley, if desired.
