Cauliflower Salad

Description

Make cauliflower salad instead of potato salad and save yourself almost 35 carbs per cup. It tastes great and satisfies that potato salad craving.

Ingredients

1 head cauliflower
6 hard boiled eggs plus extra egg slices for garnish, if desired
1/3 c. mayonnaise or Miracle Whip (DON'T use light, since it has more carbs)
3 T. mustard
3 T. pickle relish, or chopped celery
1/8 c. chopped onion, or to taste
salt and pepper, to taste
chopped fresh parsley for garnish, if desired
celery salt to taste, if desired

Steam or boil cauliflower until tender; cut into bite sized pieces.

Cook eggs until hard boiled; peel eggs, rinse and separate yokes into a bowl; mash the yolks; cut the whites into small bite sized pieces; blend together.

Mix all together. Garnish with egg slices and parsley, if desired.

Chill overnight.

(1 cup cauliflower is only 3 carbs vs. 1 cup potato is 37.)
