Cauliflower Salad

Description

Make cauliflower salad instead of potato salad and save yourself almost 35 carbs per cup. It tastes great and satisfies that potato salad craving.

Ingredients

  • 1 head cauliflower
  • 6 hard boiled eggs plus extra egg slices for garnish, if desired
  • 1/3 c. mayonnaise or Miracle Whip (DON'T use light, since it has more carbs)
  • 3 T. mustard
  • 3 T. pickle relish, or chopped celery
  • 1/8 c. chopped onion, or to taste
  • salt and pepper, to taste
  • chopped fresh parsley for garnish, if desired
  • celery salt to taste, if desired

Steps

  1. Steam or boil cauliflower until tender; cut into bite sized pieces.
  2. Cook eggs until hard boiled; peel eggs, rinse and separate yokes into a bowl; mash the yolks; cut the whites into small bite sized pieces; blend together.
  3. Mix all together. Garnish with egg slices and parsley, if desired.
