This is the perfect meal for busy weeknight dinners. It has meat, potatoes and veggies all in one main dish. It's not only quick and easy, it is delicious as well.
2 t. olive oil
1 onion, chopped
1 bell pepper, chopped
1 lb. lean ground beef
2 T. tomato sauce
1/2 c. beef stock/broth
3 T. Worcestershire sauce
salt and pepper, to taste
garlic powder, to taste, if desired
1/2 c. cooked mixed vegetables, corn, or your favorite, drained
4 c. refrigerated hash brown potatoes
2 c. shredded Cheddar cheese
Preheat oven to 375 degrees. Prepare a 9 × 9 inch baking dish with cooking spray.
In a skillet, cook onion and bell pepper in olive oil over medium-high heat until translucent. Add in ground beef; cook until browned. Discard any fat from the ground beef.
Add in tomato sauce, Worcestershire sauce, stock/broth, veggies, garlic powder, salt and pepper. Cook 5 minutes.
Spread mixture in bottom of the prepared baking dish. Spread hash brown potatoes and cheese on top.
Bake 45 minutes or until hash browns are a golden brown.
