Description
This is the perfect meal for busy weeknight dinners. It has meat, potatoes and veggies all in one main dish. It's not only quick and easy, it is delicious as well.
Ingredients
- 2 t. olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 lb. lean ground beef
- 2 T. tomato sauce
- 1/2 c. beef stock/broth
- 3 T. Worcestershire sauce
- salt and pepper, to taste
- garlic powder, to taste, if desired
- 1/2 c. cooked mixed vegetables, corn, or your favorite, drained
- 4 c. refrigerated hash brown potatoes
- 2 c. shredded Cheddar cheese
Steps
- Preheat oven to 375 degrees. Prepare a 9 × 9 inch baking dish with cooking spray.
- In a skillet, cook onion and bell pepper in olive oil over medium-high heat until translucent. Add in ground beef; cook until browned. Discard any fat from the ground beef.
- Add in tomato sauce, Worcestershire sauce, stock/broth, veggies, garlic powder, salt and pepper. Cook 5 minutes.
