Description
Enjoy this chicken chowder made with beans, corn, celery, onion, and green chiles. Serve with tortilla chips, cornbread or a crusty bread.
Ingredients
- 16 oz. can chili beans, drained
- 1 T. olive oil
- 1 medium onion, finely chopped or minced
- 1 rib celery, finely chopped
- 1 medium carrot, finely chopped
- 3-4 cloves garlic, chopped
- 1 c. chicken, cooked and shredded
- 4 oz. can diced green chilies
- 1 c. frozen corn, thawed and drained
- 1 t. ground cumin
- 4 cu. vegetable or chicken stock
- 2 c. milk, whole or skim
- 4 T. freshly chopped cilantro, for garnish, optional
- 1 c. shredded Cheddar cheese, for garnish
Steps
- Heat oil in a 4 quart saucepan over medium heat. Add onion, celery, carrot and garlic. Cook 5 minutes, stirring often.
- Add remaining ingredients, except for cilantro and cheese. Bring to a simmer; cook 25- 30 minutes.
- Serve topped with cilantro and cheese.
