You don't need to be a coffee drinker to enjoy this coffee cake. It is equally good with milk or no beverage at all. Serve it for breakfast, dessert or as a snack.
Cake:
1 stick butter, softened
1/2 c. brown sugar
1/4 c. white sugar
1 egg
1/4 c. vegetable oil
1/2 T. vanilla
1 1/2 c. all-purpose flour
1/2 t. baking soda
1/2 t. baking powder
1/4 t. salt
1 t. cinnamon
1 1/2 c. chopped apples, chopped small
Cream Cheese:
8 oz. softened cream cheese
1 t. vanilla
3 T. white sugar
Streusel:
3/4 c. white sugar
1/4 c. brown sugar
1/2 c. flour
1 t. cinnamon
1/2 t. baking powder
1/8 t. salt
6 T. butter, cold
Preheat oven to 350 degrees. Grease an 8 x 8 inch square pan.
Cake:
Combine butter and sugars; mix until fluffy. Add the egg, oil, and vanilla; mix until combined.
Stir together the flour, baking soda, baking powder, salt, and cinnamon; stir into the butter mixture, mixing just until combined. Stir in the chopped apples. Spread into the prepared pan.
Cream cheese:
Mix together the cream cheese, sugar, and vanilla; spread over the cake batter in the pan.
Streusel:
Combine all of the streusel ingredients using hands or a pastry blender until well combined. Sprinkle over the cream cheese mixture.
Bake about 45 minutes or until the topping is browned.
