Make potato cakes with leftover mashed potatoes to make these wonderful patties. Potato cakes made with crumbled bacon, garlic, green onions and Cheddar cheese are the best and can be enjoyed as a side dish for dinner, but would be great for a breakfast/b
6 slices bacon
4 c. cold, leftover mashed potatoes
2 eggs
4 cloves garlic, grated or minced
8 green onions, finely sliced
1 t. onion powder
1/2 t. salt
1/4 t. freshly ground black pepper
1 c. Cheddar cheese, shredded
Place bacon in a large skillet; cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Remove the bacon, drain on paper towels, crumble, and set aside. Leave bacon drippings in the skillet.
Add garlic and green onions; saute 1 - 2 minutes or until slightly soft. Remove garlic and green onions from drippings keeping drippings in skillet.
Combine mashed potatoes, eggs, onion powder, salt and pepper together in a bowl; stir in crumbled bacon, Cheddar cheese, garlic and green onions. Form mixture into 8 patties.
Heat the remaining bacon drippings over medium to medium-high heat, fry patties about 4 minutes per side until both sides are crisp. Drain on paper towels.
Makes 8 patties.
