This Brazilian recipe is fresh and healthy for you. It's easy and so delicious with baked salmon fillets topped with a wonderful passion fruit sauce. Serve it with your favorite rice recipe.
4 salmon fillets (5 - 6 oz. each, approximately 3/4 inches thick)
salt, to taste
freshly ground black pepper, to taste
2 T. canola oil, divided
1 T. butter
1 small onion, shredded
3 T. brown sugar
1 c. frozen passion fruit pulp (or homemade)
1/2 c. table cream or crème fraîche
1/2 c. fresh mint, finely chopped
1/2 c. cilantro, finely chopped
Preheat oven to 375 degrees.
Season the fillets with salt, pepper and 1 T. canola oil, rubbing fillets on both sides. Bake 15 - 17 minutes, or until the salmon flakes easily with a fork. (For a convection oven, bake the salmon at 350° for 13 minutes or until it flakes easily with a fork.)
Meanwhile, in a medium skillet, heat butter and remaining canola oil.; add onion; cook over medium-high heat until translucent, about 4 minutes. Stir in the brown sugar and passion fruit pulp; cook 1 - 2 minutes; fold in the table cream or crème fraîche; remove from heat.
In a small bowl, combine the mint and cilantro.
Place the salmon fillets on individual plates add 2 - 3 T. passion fruit sauce. Top with the fresh herbs. Mix and serve immediately.
