Why would you eat regular rice when you could make coconut rice instead? It's made with jasmine rice, coconut oil, freshly grated coconut and unsweetened coconut milk. Yum!
3 T. coconut oil
2 T. freshly grated coconut
1½ c. jasmine rice
1½ c. unsweetened coconut milk
1/4 c. water
1/2 t. salt
In a medium saucepan over medium-high heat, add coconut oil and coconut flakes; cook 2 - 3 minutes until golden, stirring often. Add the rice; stir until all the grains are well coated. Add coconut milk, water and salt; stir once. Bring to a light boil; reduce the heat to medium-low. Cover; cook until liquids are absorbed, about 10 - 12 minutes.
Remove from the heat; let stand, covered, for at least 10 minutes. Fluff with a fork before serving.
