Don't settle for a boring oatmeal breakfast. Make this decadent Bananas Foster Oatmeal with just a few more ingredients and a little more time.
1 c. old fashioned oats
2 t. light brown sugar, divided
1 t. cinnamon
1 3/4 c. milk
1 t. plus 1/4 t. vanilla extract, divided
2 T. unsalted butter
1 ripe banana, sliced (slice right before making the topping)
Preheat oven to 350 degrees.
Spray two 8 oz. oven-proof ramekins with non-stick cooking spray; place onto a baking sheet.
In a mixing bowl, combine oats,1 t. brown sugar, cinnamon, milk and 1 t. vanilla. Mix well.
Divide the oatmeal mixture between the two ramekins.
Bake 40 minutes.
When oatmeal has 10 minutes baking time left, begin the banana topping.
Banana topping: Melt butter in a skillet over medium heat; add sliced bananas; mix in 1/4 t. vanilla.
When the oatmeal is done, remove it from the oven. Move the top rack of the oven nearer to the top; preheat the broiler.
Spoon the banana mixture on top of the oatmeal; sprinkle with the remaining brown sugar. Broil until golden and bubbly but keeping an eye on it.
