Don't have time or energy to stand at the stove flipping pancakes? Makes these oven Finnish pancakes instead. When ready to eat, serve with your favorite toppings.
4 T. butter, cut into three - four pieces
4 large eggs
1 c. all-purpose flour
1 c. milk, preferably whole milk
pinch of salt
3- 4 T. sugar, optional
splash vanilla extract
Preheat oven to 400 degrees. When the oven temperature reaches about 300 degrees, place the butter in an 8 or 9 inch cake pan or a 10 inch pie plate in the oven so that the butter melts, but doesn't brown, while the oven finishes heating.
Place eggs, flour, milk, salt, sugar and vanilla in the blender. Blend on High, stopping to scrape down the sides as necessary, until mixture is smooth and even. When the oven is ready, and the butter is fully melted, pull the oven rack out far enough to work safely; pour the batter into the hot buttered pan. Push the rack carefully back into the oven; bake 30-40 minutes, or until the oven pancake has puffed high and is a deep golden brown. Quickly insert a butter knife in the center of the pancake and if the knife comes out clean, the pancake is done.
Remove pan from the oven and cut immediately. It will deflate a little, but that is okay.
Serve topped, as desired. Some ideas for toppings:
