These special cookies will make your day. They are chocolate gems topped with powdered sugar. Serve alone, with a tall glass of milk or a cup of coffee.
1/2 c. vegetable oil
4 oz. unsweetened baking chocolate, melted, cooled
2 c. granulated sugar
2 t. vanilla
4 eggs
2 c. all-purpose flour
2 t. baking powder
1/2 t. salt
1/2 c. powdered sugar
Preheat oven to 350 degrees. Spray a cookie sheet with non-stick cooking spray.
In a large bowl, mix oil, chocolate, granulated sugar and vanilla. Stir in eggs, 1 at a time. Stir in flour, baking powder and salt. Cover; refrigerate at least 3 hours.
Drop dough by teaspoonfuls into the powdered sugar, then roll them around to coat; shape into balls. Place about 2 inches apart on cookie sheets.
Bake 10 - 12 minutes or until almost no fingerprint remains when touched lightly in center.
Immediately remove from cookie sheet to cooling rack.
