Raspberries are so good for you, so why not enjoy them in a beautiful dessert? Serve it in a trifle dish or separate glass dessert cups to show off how gorgeous it is.
3 c. fresh raspberries, plus a few for garnish
1/4 c. sugar
1/2 t. vanilla, optional
3 T. raspberry liqueur (or water)
2 c. cold heavy cream
1/2 c. powdered sugar
8 whole Vanilla Wafers (or other preferred cookie)
fresh mint sprigs, for garnish
Wash raspberries; drain well.
In a bowl, stir together raspberries, sugar, and liqueur; let sit 10 - 15 minutes.
Whip the heavy cream with the powdered sugar and vanilla until soft peaks form.
Mash the raspberries until all the liquid and fruit are mashed and mixed together.
Spoon half of the fruit into the cream; fold once or twice; don't over mix.
Add half of the remaining fruit; fold once or twice. If wanting more fruit, add the remaining fruit; if not, use the remaining fruit puree as a garnish on top.
Serve with crumbed cookies on top as garnish with fresh mint sprigs and a few raspberries.
This dessert is best if made immediately before serving.
