One Pan Green Beans, Chicken and Potatoes

Description

Make your whole dinner in one pan with this yummy recipe. Chicken, potatoes, green beans and onion together make for an easy, quick meal.

Ingredients

12 oz. green beans, fresh, frozen or canned (if using canned, drain first)
1 lb. chicken breasts, cut in thin strips or bite sized chunks
1 lb. red potatoes, cut bite sized
½ c. salted butter
1/2 onion, sliced or cut into chunks, optional
1-2 Zesty Italian seasoning packets
salt, to taste
freshly ground black pepper, to taste

Preheat oven to 350 degrees.

Wash chicken and pat dry with paper towels; cut into thin strips or dice. Wash potatoes, cut into bite sized chunks. Peel onion and slice or cut into chunks.

Layer green beans, chicken, onion and potatoes in a 9 x 13 inch greased baking dish. Season with salt and pepper, to taste.

Cut butter into 12 to 16 slices; spread evenly on top of the vegetables and chicken.

Sprinkle Italian seasoning evenly over the green beans, chicken, and potatoes; season again with salt and pepper, to taste.

Bake, uncovered, 1 hour, until chicken is no longer pink and potatoes and soft. If the green beans start to get too cooked at around the 45 minute mark, cover with foil.

**A bottle of zesty Italian salad dressing could be substituted for seasoning packets.
