Sweet 'n Smoky Salmon Fillets with Orange Salsa

This dish is bursting with cool and fruity flavors in the salsa and the sweet and smoky salmon fillets.

Ingredients

1/4 c. orange juice
2 T. olive oil
2 T. McCormick® Perfect Pinch® Salt Free Southwest Sweet 'n Smoky Seasoning, divided
2 T. packed brown sugar, divided
1 lb. salmon fillets

orange salsa:
2- 11 oz. cans mandarin oranges, drained and cut into 1/2 inch pieces
2 T. red bell pepper, finely chopped
1 T. fresh cilantro, chopped
1/2 t. McCormick® Perfect Pinch® Salt Free Southwest Sweet 'n Smoky Seasoning

Salmon:
Mix orange juice, oil and 1 T. each Seasoning and sugar in a small bowl.

Place salmon fillets in a large resealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor.

Salsa:
Mix all ingredients in a medium bowl until well blended; cover; refrigerate until ready to serve.

Preheat oven to 400 degrees.

Mix remaining 1 T. each Seasoning and sugar in a small bowl.

Remove salmon fillets from marinade; discard any remaining marinade. Rub salmon evenly with seasoning mixture.

Bake 10 - 15 minutes or until fish flakes easily with a fork.

Serve with Orange Salsa.


*It would also be good with McCormick® Perfect Pinch® Salt Free Fiesta Citrus Seasoning.

**Salmon on the grill:
Marinate and season salmon as in above directions. Grill over medium-high heat 6 - 8 minutes per side or until fish flakes easily with a fork.
