You will love this simple to make pasta salad. It's a scrumptious side dish to make for all of your warm weather meals. It's creamy, light and tangy dressing coats the fresh veggies and pasta.
Salad:
8 oz. macaroni, ditalini or your choice of pasta
1 T. kosher salt
1 c. tiny broccoli florets
1/2 c. diced cucumber
1/2 c. finely diced red pepper flakes
1/2 c. sliced black olives, drained
1/4 c. very thinly sliced green onion
Dressing:
1/2 c. mayonnaise
2 t. white wine or plain vinegar
1/2 t. kosher salt, adjust to taste
1/2 t. freshly ground black pepper
1/2 t. sugar
Wash/rinse broccoli, cucumber and green onions. Dice and slice as directed.
Cook pasta according to the directions on package, in well salted boiling water, (about 1 T. kosher salt), about 6-8 minutes. Right before pasta is done cooking, add broccoli to the pot. Allow the broccoli to boil for about 30 seconds; drain. Rinse well with cold water.
Dressing:
Stir together mayonnaise, wine or vinegar, salt, pepper, and sugar in a large bowl.
Add cooked pasta and broccoli; stir well to coat. Add the cucumber, pepper, and green onions; stir. Taste and adjust seasonings, as needed. Cover; refrigerate until ready to serve. Stir again just before serving.
