You will love this simple to make pasta salad. It's a scrumptious side dish to make for all of your warm weather meals. It's creamy, light and tangy dressing coats the fresh veggies and pasta.
Ingredients
- Salad:
- 8 oz. macaroni, ditalini or your choice of pasta
- 1 T. kosher salt
- 1 c. tiny broccoli florets
- 1/2 c. diced cucumber
- 1/2 c. finely diced red pepper flakes
- 1/2 c. sliced black olives, drained
- 1/4 c. very thinly sliced green onion
- Dressing:
- 1/2 c. mayonnaise
- 2 t. white wine or plain vinegar
- 1/2 t. kosher salt, adjust to taste
- 1/2 t. freshly ground black pepper
- 1/2 t. sugar
Steps
- Wash/rinse broccoli, cucumber and green onions. Dice and slice as directed.
- Cook pasta according to the directions on package, in well salted boiling water, (about 1 T. kosher salt), about 6-8 minutes. Right before pasta is done cooking, add broccoli to the pot. Allow the broccoli to boil for about 30 seconds; drain. Rinse well with cold water.
