This delicious and fresh dip is very tasty the first day, but is even better the next day when all of the flavors are infused. Enjoy it with carrots, celery, pita or tortilla chips.
15 oz. can garbanzo beans, drained
1 c. fresh cilantro, or to taste
1 Jalapeno pepper, stemmed and diced, or to taste
3 cloves garlic, diced
1 T. olive oil, or as needed
salt, to taste
freshly ground black pepper, to taste
pinch garlic powder, or to taste
juice of lime or lemon juice, to taste
water, to taste
cilantro sprigs, for garnish
Blend garbanzo beans, cilantro, jalapeno pepper, garlic, olive oil, salt, black pepper, and garlic powder in a blender until smooth. Add in splash in juice, to taste. Add water, to desired consistency.
Serve, garnished with cilantro sprigs, if desired.
