Make these bite sized beauties when you need a special appetizer to amaze friends, family or guests. They are so quick and easy to make and look gorgeous on a platter to serve.
25 very large cherry or grape tomatoes
4 slices bacon, cooked and crumbled
3/4 - 1 c. shredded Pepper Jack cheese
2 T. bread crumbs
2 T. olive oil
Preheat oven broiler; line a baking pan with aluminum foil.
Wash cherry tomatoes; cut off tops; scoop out the insides of each cherry tomato with a small spoon or pairing knife. Lay tomatoes cut side down onto paper towels so any remaining liquid or seeds can drain out for about 10-15 minutes.
Stuff tomatoes with 1 - 2 t. cheese and about 2-3 pieces of bacon per tomato.
Place tomatoes on the prepared baking dish; drizzle with 2 T. olive oil; sprinkle bread crumbs over the tops.
Broil for 3-4 minutes, or until cheese is bubbly and golden brown.
Serve warm arranged on a pretty platter.
