Make your whole meal of baked potatoes and BBQ chicken in the slow cooker. It's so easy to make, yet so delicious. Top with your favorite garnishes.
6 large baking potatoes
6 boneless chicken breasts
1 c. BBQ sauce
Topping choices:
butter
sour cream
shredded cheddar cheese
bacon bits
chopped chives
6 c. salad greens, your choice
Wash chicken and pat dry with paper towels.
Place chicken and BBQ sauce in large zipper bag; zip to seal; squish around to mix.
Wrap each potato in aluminum foil; store in refrigerator until ready to cook.
Cooking;
Place chicken in a slow cooker. Cover with foil; place foil wrapped potatoes over the chicken. Cook on low 6 hours.
Remove potatoes from slow cook and discard foil.
Shred chicken with forks. Serve over potatoes. Top with butter, sour cream, shredded cheese, chopped chives and/or bacon bits.
Serve with a green salad.
