Take that caesar salad to a whole new level with black truffles. No need for anchovies and croutons when you have these special black truffles on your salad. This salad is fantastic for those truly special occasions.
juice of 1 large lemon
1/2 c. extra virgin olive oil
2 oz. black truffles, divided
1 t. kosher salt
1 head romaine lettuce
Add lemon juice, olive oil, and salt to a blender or small food processor.
Grate half of the truffles into the blender; reserve remainder to grate over the salad as a garnish.
Blend dressing until thick and creamy; taste and adjust salt and oil to lemon ratio to your taste.
Chop, wash and dry the romaine lettuce.
Toss with dressing; plate.
Shave remaining truffles over each plate.
Serve.
