Vidalia onions are only found in Georgia and are known for being unusually sweet and mellow. This delicious slaw recipe is made with them and can be served as a side but can also be served on hamburgers, hot dogs, brats or anything that your heart desires
2 Vidalia onions (or other sweet onion)
Buttermilk dressing:
1/2 c. buttermilk
1/2 c. mayonnaise
2 T. O Citrus Champagne Vinegar (can be found at Whole Foods or on Amazon)
2 t. celery seeds
1/2 t. salt
freshly ground black pepper, to taste
Garnish:
dill, parsley, thyme, or chives, to taste
Peel and slice onions into thin 1/8 inch slices with a mandolin slicer, if you have one. Cut the slices in half or thirds.
Put onion slices into a bowl, carefully separating the strands while adding them.
Whisk together the dressing ingredients, making sure to taste and adjust ingredients.
Pour enough dressing over the onions to saturate them, but don't drown them. Toss well; refrigerate for several hours before serving.
Garnish with just a bit of your choice of dill, thyme, parsley or chives before serving.
The dressing is a little on the thin side. So, if you want it it thicker and creamier, use just half of the buttermilk when preparing the dressing.
