Description

This is a delicious and very popular salad in the St. Louis area from a restaurant called Rich and Charlie's.

Ingredients

• 2 heads lettuce, romaine and red, washed and drained
• 1 jar marinated artichoke hearts, drained
• 1 small jar pimentos, drained
• 1 red onion, cut into rings
• ⅓ c. good quality olive oil
• ⅓ c. red wine vinegar
• ⅓ c. shredded Parmesan cheese
• freshly ground pepper and salt to taste

Steps

1. In a small jar, cruet or bowl, combine the oil, vinegar, Parmesan, salt and pepper.
2. Place salad ingredients in a large bowl.
3. Toss with dressing.
