This is a delicious and very popular salad in the St. Louis area from a restaurant called Rich and Charlie's.
2 heads lettuce, romaine and red, washed and drained
1 jar marinated artichoke hearts, drained
1 small jar pimentos, drained
1 red onion, cut into rings
⅓ c. good quality olive oil
⅓ c. red wine vinegar
⅓ c. shredded Parmesan cheese
freshly ground pepper and salt to taste
In a small jar, cruet or bowl, combine the oil, vinegar, Parmesan, salt and pepper.
Place salad ingredients in a large bowl.
Toss with dressing.
Let sit 30 minutes in the fridge, covered with a damp towel.
Serve wilted.
