This bread is so easy. There is no kneading necessary. Just mix and bake. It's delicious too.
1 c. butter, softened
2 c. sugar
2 eggs
2 c. buttermilk or 2 c. milk + 2 T. vinegar or lemon juice
4 c. flour
2 t. baking soda
Cinnamon Sugar:
2/3 c. sugar
2 t. cinnamon
Preheat oven to 350 degrees. Grease 2 loaf pans.
Cream together butter, sugar, and eggs. Add buttermilk, flour, and baking soda.
Put half of the batter (or a little less) into prepared loaf pans (1/4 in each pan).
In a separate bowl, mix in the 2/3 c sugar and cinnamon. Sprinkle 3/4 of the cinnamon mixture on top of the 1/2 batter in each pan. Add the remaining batter to the pans; sprinkle with the remaining cinnamon topping. Swirl with a knife.
Bake 40-50 minutes or until a wooden toothpick comes out clean.
Cool in the pan 20 minutes before removing from pan.
Serve.
Makes 2 loaves.
