Three Ingredient Peanut Butter Cookies

These old fashioned cookies are peanut buttery good. They are dense and chewy and are so simple to make.

1 c. sugar
1 c. peanut butter
1 egg

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or Silpat.
Stir ingredients together until smooth. Scoop onto prepared cookie sheet. Press down with the back of a fork; press again from the opposite direction, to form a criss-cross pattern on top.
Bake 12 minutes. Let cool on the cookie sheet 1-2 minutes before removing to a wire rack to finish cooling. Store in an airtight container.
Makes 18 cookies.
