1 T. butter
1 lb. boneless, skinless chicken breasts
2 c. Minute rice, regular or brown
1 can cream of mushroom soup
1 can cream of chicken soup
1 can of water, using one of the soup cans
1 envelope dry Lipton onion soup mix
Preheat the oven to 350 degrees. Butter a 9 x 13 inch baking pan with the 1 T. butter.
Wash chicken and pat dry with paper towels.
In a medium bowl, combine cream of mushroom soup, cream of chicken soup, 1 can water, and rice. Pour mixture into the prepared pan. Place chicken breasts on top of mixture. Sprinkle the onion soup mix evenly on top of chicken breasts.
Cover pan with aluminum foil; bake 1 to 1 1/2 hours or until the chicken is cooked throughout.
