While these peanut butter cups can't be classified as healthy, they are healthier than the store bought kind and taste much better! They are chocolate cups filled with natural peanut butter, honey and a graham cracker filling and are then topped with pral
fFlling:
1/2 c. natural smooth peanut butter
2 T. graham cracker crumbs
1 T. honey
1/8 t. salt
1 1/2 T. salted butter, at room temperature
1/2 t. vanilla
Chocolate coating:
2/3 c. semi-sweet chocolate chips
2/3 c milk chocolate chips
Topping:
Praline-coated peanut (honey-roasted or plain peanuts, work too), chopped
sea salt
Filling:
Combine all filling ingredients in a small bow; mix well; place in freezer until needed.
If using paper liners, place them on to a baking sheet; set aside.
Place chocolate chips in a microwavable bowl; microwave on High 40 seconds;
remove; stir well. If chocolate isn't completely melted, microwave another 15-20 seconds or until melted.
Spoon about a teaspoon of melted chocolate in the mold or paper liners. Using a popsicle stick or something similar, spread chocolate over the bottom and up the sides. Once all molds/paper liners are filled with chocolate, place in refrigerator 5 minutes, to set up.
Remove chocolate from refrigerator and peanut butter filling from freezer. Spoon some of the peanut butter filling into each chocolate cup, filling almost but not quite to the top, leaving some space for the chocolate topping.
If remaining chocolate needs to be softened, microwave 10 seconds or so to soften again; stir well. It's best for the chocolate not to be hot to avoid melting the peanut butter filling. If necessary, allow to cool a bit. Spoon over each cup; spread to cover. Sprinkle with chopped praline peanuts and salt. Place in refrigerator to set up.
**The filling will be quite soft, even when refrigerated, owing to the natural peanut butter.
