This salad doesn't really sound like much, but it is amazing. It's a light, refreshing salad, and the salty feta cheese with the sweet watermelon is very tasty. The tang of the mint adds even more delicious flavor. It is best if it is put together just be
5 lb. watermelon, cold
1 Vidalia, other sweet onion, or red onion
1/4 c. red wine vinegar
salt, to taste
freshly gound black pepper, to taste
1/2 c. extra-virgin olive oil
2 T. chopped fresh mint
4 oz. feta cheese, crumbled
6 whole mint sprigs
Slice open the watermelon; cut the flesh from the watermelon; cut into bite sized pieces; remove/discard the seeds; set aside. Peel onion; slice into thin rings.
In a small bowl, combine vinegar, salt, and pepper; whisk until salt is dissolved; slowly whisk in olive oil, a few drops at a time. Add in the chopped mint; taste; adjust seasonings.
In a large bowl, combine the watermelon, onion, and feta. Pour dressing over the watermelon mixture; toss gently until everything is coated and mixed. Garnish with mint sprigs.
Serve immediately.
