Description

Enjoy this as a smoothie at breakfast or later in the day as a dessert. It's a little bit sweet but has no refined sugars. It has a touch of freshly squeezed lime juice and just a little salt which really brings out the flavors.

Ingredients

13.5 oz. can Thai coconut milk
1 1/2 c. pineapple chunks, frozen
1 medium banana, broken into chunks and frozen
2 T. honey
2 t. freshly squeezed lime juice
1/8 t. fine sea salt

Place all ingredients in the blender; puree until smooth and creamy.

For smoothies, pour into glasses; serve immediately.

For ice cream, pour into an ice cream machine and process according to manufacturer's directions. Scoop into bowls; serve immediately after freezing.
**If you don't have an ice cream maker, stir it every 20-30 minutes while it is in the freezer for an hour or so, so it doesn't turn into a solid. Once it is the consistency you want, scoop and serve.
