This salad is super easy and quick to make. It has ingredients that together are an unexpectedly good combination. Serve it with any main dish, but it is especiailly good for those grilled dinners.
¼ c. thinly sliced red onion, cut into large pieces or rings
1 fresh pineapple
1 cucumber
¼ c. olive oil
1 T. freshly squeezed lime juice
¼ t. kosher salt
a little fresh mint, optional
Submerge red onion slices in ice water for about 10 minutes.
Peel and core pineapple; cut into bite-sized chunks.
Slice cucumber thinly; cut in half.
Drain onions; pat dry; dice.
Pour olive oil, lime juice and salt in a bowl; whisk to combine; add pineapple, cucumbers and red onion; toss to coat.
Serve immediately.
4-6 servings.
