This is a simple and quick lunch to make for your family or guests. Serve it on bread, toast, a bun, on a pita pocket, in a hollowed out tomato or just on a bed of lettuce. Add your own favorite ingredients like dill pickle, bacon or cream cheese to make
Ingredients
- 1/2 c. mayonnaise
- 2-4 t. freshly squeezed lemon juice
- 2 t. dried minced onion (chopped green onion or red onion can be used as well)
- 1/2 t. salt
- 1/2 t. pepper
- 1/2 t. paprika
- 2 t. Dijon mustard
- 16 hard-boiled eggs, chopped
- 1 c. finely chopped celery
- chopped fresh parsley, if desired
Steps
- In a large bowl, combine mayo, lemon juice, onion, salt, pepper, paprika and Dijon mustard. Stir in eggs and celery. Cover; refrigerate.
- Before serving, sprinkle chopped parsley, if desired.
- 6 servings.
