Make this no-bake dessert while strawberries are in season and at their best. It's a great dessert to make and serve when you want a fabulous dessert but you don't want to heat up the kitchen with baking. Substitute your favorite pudding mix, if desired.
No-bake graham cracker crust:
10 sheets plain graham crackers
3 T. milk
non-stick cooking spray
Tart filling:
4 c. sliced strawberries, or more if desired
1/3 c. prepared strawberry gelatin, regular or sugar-free
1 small box Instant French Vanilla Pudding mix, regular or sugar-free
3 T. strawberry jam
whipped cream, optional
Wash, drain, hull and slice strawberries.
Crust:
Blend graham crackers in a food processor until they are a fine crumb. Add in the milk; mix until fully incorporated. Spray pie pan with cooking spray; pat moistened crumbs into the pie pan; set aside.
Tart filling:
Prepare the strawberry jello according to package directions; cool a little while, but it should still be liquid.
Prepare the pudding/pie mix according to package "pie filling" directions.
Fill the prepared crust with the prepared pudding/pie mixture in an even layer.
In a large bowl, blend the cooled and still liquid strawberry jello with the strawberry jam until jello/glaze is completely mixed; add in the strawberries; gently toss until fully covered with jello/glaze mixture.
In an even layer, spoon the strawberries over the pudding/pie mixture, mounding in the center, if necessary.
Place in refrigerator. Let set a few hours to firm up.
Serve with whipped cream, if desired.
