This rice side dish is perfect when you are tired of making the same dishes time after time. It's great with chicken, seafood or pork.
1 c. basmati rice
1 T. good quality olive oil
1 large yellow onion, diced
1 large carrot, shredded
2 garlic cloves, minced
1 T. minced, peeled fresh ginger
1 3/4 c. water (or chicken stock)
3/4 t. Kosher salt
freshly ground black pepper, to taste
1/4 c. fresh chopped cilantro, optional
In a medium saucepan, heat olive oil over medium-low heat; add onion and carrot; cook, stirring frequently, until onion is very tender, 15 - 20 minutes. Add garlic and ginger; cook 2 minutes. Add basmati rice, stirring to coat. Add water, salt and pepper; bring to a boil; reduce to a simmer; cover; cook until rice is tender, 17 - 20 minutes. You may need to add a little more water if the saucepan becomes dry.
Garnish with chopped cilantro, if desired.
