Serve this wonderful veggie with yummy prosciutto and cheese as a side dish or even as an appetizer. You can use Swiss cheese slices or any grated or shredded cheese that you prefer.
1 lb. fresh thin asparagus (about 35 spears)
6 prosciutto slices
3 Swiss cheese slices - each cut into half (or favorite cheese)
extra virgin olive oil, to drizzle
freshly ground black pepper, to taste
Preheat oven to 350 degrees.
Rinse asparagus; cut off ends, about 3 inches from the bottom; discard ends.
On a non-stick baking sheet, layer a slice of prosciutto , then place a piece of cheese in the center.
Place about 5 - 6 thin asparagus spears in the center. Starting at one end of the prosciutto slices, wrap each into a bundle. Repeat until all the asparagus are wrapped; lightly drizzle with olive oil.
Roast for 15 minutes.
Remove; serve.
